The other day my colleague bought some Chinese noodles which I used them to cook our staff meal. I took inspiration from a noodle dish my Mum makes using these noodles and made a similar one with slightly different ingredients. For the noodles, I simply boiled them in some water just like you would cooking dried pasta. Bring a pot of water up to a boil and then dump in the noodles to cook. For the broth, I used my Mum's recipe which uses a Chinese preserved vegetable that's spicy and sourish. It also has a nice sweetness that makes the broth super flavorful and tasty. I also added in to the broth some carrots and white radish to give it more complexity of flavor. I then boiled some shrimp and chicken dumplings in the broth and then plate the noodles up to eat. The noodles go into a bowl first then topped with the broth. I then garnished the bowl with some slices of radish, dumplings, and preserved vegetable. I also got some pickled bamboo shoots which I garnished the noodles on the side. On the top, I added an onsen egg and sprinkled the dish with some chopped spring onions and some dried shrimp chili, mixing everything together to add some spicy kick to it.
