The other day my Filipino colleague cooked some delicious Filipino stew with chicken and coconut milk. It's called 'Ginataang Gulay', a vegetable stew with long beans and pumpkin. It starts with sautéing ginger with oil until the ginger is fragrant. Next onions, long beans that have been cut into 1 and a half inches long, and roughly chopped pumpkin goes in to sauté. Season with salt and stir fry them for about 3-4 minutes and then the chicken goes in. We used boneless chicken thighs that have been cut into cubes. They are tender and juicy that suits this dish perfectly. Cover the lid to cook on medium heat for about 5 minutes and season the chicken with some salt and fish sauce. Remove the lid and stir before adding in coconut milk. If you can't get freshly squeezed coconut milk, the box version will do fine. Cover the lid and simmer for another 10-15 minutes and season to taste and the stew is ready to serve. We had this creamy delicious dish with rice and it was amazing. The gravy was rich and creamy. It had a wonderful balance of savory and natural sweetness from the longbeans and pumpkin stewing together with the chicken. Super delicious and a must try in your recipe book.
