We still had some orecchiette left at the shop so I decided to finish this pack up by making a broccoli orecchiette pasta dish for lunch. For the sauce I made it a little different this time. Instead of blending the broccoli stems with tuna and red pepper flakes, I extracted the juices of some asparagus which we had leftover. I boiled them for about 3 minutes in boiling water then I removed them and blended them together. In then let it cool and squeezed out the juices from the asparagus and added into it some slices of anchovies. For the broccoli, I roasted them in an oven for 10 minutes at 180 degrees Celsius and seasoned it with garlic butter, salt and some pepper. For the sauce, I Sautéed some onions in oil and then added slices of chicken tenders to stir fry them together. Next I added in the asparagus juice to it and let it simmer for 2-3 minutes. For the pasta, I simply boiled them in water and when they were done added them to the sauce cooking them together for another 3-4 minutes so that the pasta absorbs the flavors from the sauce. Season to taste and the dish is ready. Grate some parmegiano regiano on top and it's ready to be served. Yums! ~~ #food #foodie
