One of my colleagues bought this vegan sort of penne pasta from the supermarket recently so I decided to use it for one of our staff meals. I sort of knew they weren't gonna be nice as nothing vegan ever taste amazing especially those that actually require animal produce to make. Anyway, we had them so I used them. I made a vegetable soup with chicken and penne for our meal. It starts of with a medley of vegetables like broccoli, cauliflowers, carrots, onions, and baby corn. I simply chopped them up into bite size pieces and then set them aside. For the chicken, I used chicken tenders and roughly chopped them as well. I sautéed them in some oil in a pot for about 2 minutes then I added in water and the pasta in. After cooking the pasta for about 10 minutes, I then added in all my vegetables which I prepped beforehand and cover the lid of the pot with the heat off. Leave it for about 10-15 minutes and the risidual heat would've cooked the vegetables perfectly. Season to taste with salt and pepper and you're done. The soup was so flavorful with the sweetness from the vegetables and the broth turned out to have a nice smoothness from the starch that the pasta released. The pasta however didn't have a nice taste to it as it didn't taste like usual pasta. But the meal was delicious with the vegetables and the amazing flavored broth. Will definitely use regular pasta next time. #food #foodie
