Are you familiar with 'burong isda'? This is made up of fermented cooked rice and a raw filleted fish. It is very popular in our place in Pampanga but in white color. But this one that I cooked is from Nueva Ecija. They usually made it pinkish by putting on what they so called 'angkak'. Our neighbor came from Nueva Ecija and gave me this coz she knows I'm eating buro. I sauteed it with just garlic, onion, and tomatoes. It is best paired with grilled fish and steamed/boiled vegetables like eggplant, sweet potao leaves, string beans and even bitter gourd. I remember, during fiesta in every barangay this is always present in the table. But those who are not familiar with this doesn't like its look and smell. But once they taste it then they started to like it.
