Good afternoon noisy mates! Hope that your all fine and safe wherever you are. Anyway, Are you guys ever try to eat a pork skin ceviche ( kilawin in Tagalog language) before? We'll I guess some but not too many tried this pork skin ceviche because some don't know how to prepare it or some are afraid to ate it because it is high in cholesterol, But guy's pork fat is more healthy than those fats found in beef and lamb or chicken, In fact pork fat is high in B vitamins and minerals that gives us healthy and glowing skin, But it is high in saturated fats, so I do recommend it but in moderation only. So let's try to prepare this pork skin ceviche, All you have to do is wash the pork skin thoroughly, boiled it for about one hour just put a little amount of sea salt, after boiling just set aside let it drain the excess water, after that it's time to grilled the outer parts of skin to remove some of oily fats and hair, then slice or chop it in bite size, put it in a large bowl add some vinegar, onions, ginger, lemon or (calamansi extract) local lemon, ground pepper, red and green chilies and seasoned it with salt and a dash of msg (optional) for added umami taste. You can add more onion or chilies if you want and that's it guys you can now enjoy the pork skin ceviche made by yourself. Enjoy! Happy Eating!
