I have some coins I want to cash out to Fiat from Binance. In the past I've transferred it to Coinbase but their fees are ridiculous. What do you guys use?

Tbh I use P2P. But you have to pass KYC for that and also the currency must be offered at P2P. Most popular crypto is USDT that is traded to popular Fiat

Oh yeah, I only buy from P2P because Binance itself is the escrow
