Add 1 tablespoon of salt and juice of two lemons. Mix well, add water and let it boil for about 20 minutes. After boiling, discard the water, wash the meat well and in the pressure cooker, sear the meat on all sides until golden brown. Add the seasonings, 1 tbsp of tomato paste (extract), the bay leaves and add hot water to cover the meat. Close and count 40 minutes after pressing. After that time, evaluate if the meat is soft or if it still needs more time. I put the meat in a refractory and put the broth in a container in the fridge. When the fat separates (it won't even have much, because the boiling process at the beginning already leaves it very clean), you remove the fat, return the broth to the pan (if it's too little, add the tomato sauce), if you have enough , put the watercress and then just add it to the meat! .
