Let's eat leaves! The goat is craving for crunchy leaves and so she picked some kangkong (water spinach) and mulberry leaves and fried. The last time I cooked crispy water spinach was I think 5 years ago together with okra (lady's fingers). Though, almost every year I'm frying different edible leaves or flowers like mulberry, jackfruit leaves, and squash flowers. You can try this if you want. Just prepare water spinach or mulberry leaves or any edible leaves that you know. In a bowl, mix water, corn starch, flour, and salt. You can add eggs if you're not a vegan, and pepper to add a little spice. Add the leaves and mix with the batter and make sure all are coated. Fry until golden brown and put it on paper or towel or clean cloth to absorb the excess oil. Serve it with plain vinegar, sinamak (spiced coconut vinegar with garlic, ginger, langkawas or galangal), or mayonnaise. Enjoy the crunch in every bite! And it's healthier than fried meats. Yes sis masarap nga yung crispy kangkong, but yun sa mulberry & jackfruit di ko alam edible din pala..
