Baked taro with cheese for merienda. I put a little cheese only for it was not a vegan one. Palawan or Palauan/Galyang or giant taro commonly harvested root crop in the Visayas Islands and Mindanao. We used to cook this before for our pigs only but later on we boil and eat the corm (a swollen stem) and is good source of carbohydrate. Its leaves and stems are also eaten as vegetables and rich in vitamins. (livingrainforest.org) All parts of the plant has calcium oxalates which are needle-shaped crystals that makes the mouth, tongue, and throat feel as if there are needles digging into them and so must be cooked thoroughly. (pfaf.org) My sister in-law's father taught us how to cook the stem like a fried eggplant and will try it again next time.
