My own version of coconut cookies! It should be a no bake coconut cookies but since I haven't use our oven for few months, I baked it for 30 minutes at 200 °C. I craved for a dessert that has no animal-based ingredients few months ago and found a coconut cookies recipe from kirbiecravings but was not able to do it that time. Only today when we have a pancho banana harvest so I tried it with for the first time. And since I cooked cassava tops in coconut milk yesterday, I kept some grated coconut and mixed it with mashed pancho. In the original recipe, it should be mashed banana, peanut butter, and shredded coconut but I Iove food experimentations and we have no peanut butter so I just added a tablespoon of vanilla, mixed well, formed into small flat circles and baked. It turned out to be yummy and not so sweet cookies. Just the natural sweet of ripe banana so it's healthier and it's also my dinner tonight instead of eating it as a dessert. You should try it guys and enjoy the health benefits of plant-based cookies.
