In this article, I want to share a traditional Iranian dish that is perfect for cooking in nature and loved by almost everyone who tries it. ****Ingredients**** 1 kg lamb shank (mahicheh) 3 onions Garlic (as needed) Animal butter (clarified butter preferred) 1 bell pepper Saffron Salt Black pepper Turmeric Cinnamon Bay leaves Pul biber (chili flakes) ****Cooking Instructions**** 1) Wash the lamb shanks thoroughly with clean water. 2) Slice the onions and arrange them at the bottom of a pot. 3) Chop the bell pepper and place it over the onions. 4) Arrange the meat on top of the vegetables. 5) Add whole garlic cloves on top of the meat. 6) Place pieces of animal butter over all the ingredients and let them lightly sauté for about 10 minutes. 7) After the onions soften, add clean water until the pot is half full. 8) Add salt, black pepper, turmeric, bay leaves, pul biber, cinnamon, and saffron. ****Important Tip About Saffron**** To release saffron’s full aroma and flavor, grind it into a fine powder, then add a small amount of boiling water and let it bloom for a few minutes before adding it to the pot.
